Because I had a hard and tiring week, for Friday night I don't think I could find a better way to relax than making a delicious cake :) The idea for this cake came to me after I received some homemade urda, good, natural, fat but I don't like urda at all, in its pure state, so I was sorry to let it spoil and so I created this cake that in the end was very, very good and flavorful :)

- 9 tablespoons flour
- 1 teaspoon ground ginger
- 2 sachets of baking powder
- 2 tablespoons olive oil

- For the cream:
- 3 eggs
- 300 gr urda
- 2 purebred apples
- 3 tablespoons sugar
- 2 tablespoons cinnamon
- grated peel from a lemon
- For topping:
- 2 apples
- 1 teaspoon cinnamon
- 6 tablespoons sugar

RECIPE PREPARATION Cake with urda, apples and ginger:
Wheat: I separated the egg yolks, I rubbed the yolks well with the sugar, the essence, then I added the olive oil, the flour, the baking powder and the ground ginger. I beat the egg whites with a pinch of salt, then I incorporated them. slightly over the yolks.
I divided the dough into two parts, I put one part in a tray lined with baking paper and I put it in the oven over low heat. Until the first top is baked, I prepared the cream of the cake.
Cream: I broke the 3 eggs in a bowl, beat them well until they frothed, then added over them the bacon, lemon peel, 2 grated apples, 2 teaspoons of cinnamon and sugar and mixed well until all the flavors combined.
After the countertop was baked for more than half, I took the tray out of the oven, put my urda cream on top of the countertop, leveled it nicely, then put the rest of the dough and put the tray back in the oven until it baked nicely.
After I took the cake out of the oven, I sprinkled it with powdered sugar and I prepared an apple topping.
Topping: I cut the 2 apples into thin slices and put them in a pan on the fire, I put over them the sugar, cinnamon and I let them caramelize nicely. The hot caramelized apples, I placed them over the cake in the pan and then I let everything cool completely.
